Our chocolate is made with the best cocoa liqueur (also called cocoa mass) and cocoa butter from Guittard Chocolates and Jedwards International, both premier purveyors. They are designated Fair Trade USA, USDA Organic, Friend of the Sea, Kosher, Non-GMO suppliers. We are proud to be associated with them and every other of our suppliers.
In addition to the 74% of cocoa liqueur and cocoa butter inside, we also apply a thin coating of the most flavorful cocoa, containing 22% cocoa butter, outside. Why? Because it provides protection against variation in temperature and humidity, so our chocolate stays fresh much longer.
The coconut and palm glycerin, specified in our recipe either alone or in combination, are from Nature’s Oil; while the sunflower lecithin comes from New Directions Aromatics. Both are highly regarded and proven suppliers of natural and organic ingredient manufacturers.
Of course, our vanilla is from Madagascar, Bourbon Pure Vanilla by Nielsen-Massey.

The super-refined sugars, used in chocolates today, deliver very smooth texture but NO health benefits, to say the least. Also, they are produced from GMO sugar beets, which not approved in European and some other countries, and are considered harmful by some people in the U.S. too.
It is possible to make chocolate super-healthy, by substituting sugar with natural low or zero calorie sweeteners. The problem till now has been that stevia and monk fruit extract provide neither the full spectrum of sweetness nor the ability to produce confectionery products with the right solids composition.
We’ve solved this with Sugarlesse™, our proprietary (patent applied for) blend of natural sweeteners, which are Generally Accepted As Safe (GRAS) by the U.S. Food and Drug Administration. Einstein chocolates contain between 15-20% of it — and are just as sweet and smooth as the other ones made with sugar.

We know. It sounds good and “politically correct.” It's true, though. But what does it mean?
Let’s start with domestic manufacturing. Is it more sustainable? Experts think so. Greg Bertelsen, director of energy and resource policy at the National Association of Manufacturers, says many of the association's 12,000 members consistently cite sustainable manufacturing goals – such as their desire to reduce their environmental footprint, to create a safe and healthy workplace, and to treat their community well – as priorities. "US manufacturers are the world's most energy efficient," according to him.
Marc Onetto is a manufacturing consultant and retired senior vice president of Amazon.com worldwide operations and customer service. He says, “Domestic manufacturing is more sustainable because it can minimize over production, the worst form of waste. Lean manufacturing helps by reducing waste in the most expensive cost categories: labor, energy, facility, and land usage.”
So, how do our Einstein™ Chocolates measure up?
Even better. Our chocolates are produced with a proprietary (patent applied for) process, developed and continuously improved by us. As you can see from the flowchart on the Home page, conching and other energy intensive production steps have been eliminated. The result is similar to the minimally processed chocolates made by the Aztecs - but updated to the 21st century.
